Today we became a forever family. It's also Matthew's first birthday! I can't believe an entire year has gone by.
Yes, it's snowing.

Court
We went to court today. Of course, we ended up on the wrong floor. Dad was sent to find us. We made it to the right floor, and everything went smoothly. The papers were signed, and we were pronounced a family.

My new Kitchen Toy
This year I promised myself I would buy a pressure cooker. I have no qualms about canning, and was disappointed to find that there are a lot more things that require pressure to be canned not just a water bath.
The benefit has been how awesomely fast it cooks other food. Chicken, roast, veggies all quick easy, tasty and nutritious.
And the new safety features can't be beat! No exploding food in my kitchen.

The Tortilla Experiment
Two recipes: Pioneer Woman and Alton Brown
A giggle: Both recipes required lard and kosher salt
The final product: taquitos. Which meant that the tortillas needed to be pliable, and soft.
The winner?
Pioneer Woman. Although Nick said he liked the flavor of the Alton Brown one better, it crisped up too much to roll. I thought they both tasted the same -bland like flour tortillas.
I love kitchen experiments.
